Domaine Didon, the estate of Naïma and David Didon, is based in Chassey-le-Camp, in Burgundy, in the heart of the Côte Chalonnaise. It is a young natural wine estate founded in 2017, working the vines organically and intensively biodynamically, without certification.
The estate
The estate was founded in 2017 by Naïma and David Didon, neither of whom comes from a winemaking family. David trained in environmental protection and arboriculture, then at the biodynamic school in Beaujeu, and was vineyard manager in the Côte de Beaune, at Château de Puligny then at Domaine de Montille in Volnay, where he led the biodynamic conversion. Naïma worked in sales and administration for a Beaune winegrower. The estate acquired a 2-hectare plot at the lieu-dit « Les Vignes Blanches », planted with old vines dating from 1942 to 1967, and made new plantings from 2018. Viticulture is intensive organic and biodynamic, uncertified: hand harvesting, indigenous yeasts, little or no sulfur, no inputs. David, originally from Alsace, also vinifies négociant grapes from Burgundy, Beaujolais and Alsace.
The region
The estate is located in Burgundy, in the Côte Chalonnaise, in the village of Chassey-le-Camp. The appellations worked are white and red Bourgogne, Bourgogne Aligoté, Coteaux Bourguignons and Vin de France.
